Max continuous Amp(current) means how much current the ESC can take continuously without melting or shutdown.
when you have a modified motor it will draw a LOT of current esp when you overgear it or accelerate it.
An ESC that can take a lot of current will let the motor take the current while still running at acceptable temperature and performance.
If you ESC cannot take that kind of current it will heat up and melt(in extreme case).
when you see 300-600 amps in the specs, it means the allowable current spike , for a short period only.
